Butternut Squash Noodles with Vegan Feta

Makes 2 servings or 1 for me

Ingredients:

2 tbsp toasted pine nuts

1 tbsp olive oil

1/2 cup diced onion

4 cloves minced garlic

2 seeded jalapenos diced or 1/4 cup diced bell peppers

1 tsp of crushed red chili flake

1/4 cup diced sun-dried tomatoes

12 ounces spiralized butternut squash noodles

2 cups fresh baby spinach

1/2 cup vegan feta cheese Recipe Here

Optional Fresh chives for garnish

Optional Fresh basil for garnish

Salt and Pepper to taste


Instructions:

Add olive oil to a hot skillet. Add in onion, garlic, jalapeno and cook about 3 minutes until softened. Add in chili flake, sun-dried tomatoes and butternut squash noodles. Stir to combine. Cover and cook until noodles are softened but not mush (about 3 minutes). Add in spinach and cook until wilted. Top with blobs of feta cheese and serve garnished with chives and basil. Add salt and pepper to taste.
