Chicago Style Vegan Carrot/Daikon dog

Makes 6

Ingredients: 6 hot dog sized carrots or daikon radishes 1/4 cup rice wine vinegar 1/4 cup water 2 tbsp soy sauce 1/2 tsp garlic powder a few dashes of liquid smoke pinch of kosher salt ground black pepper Garnishes:

6 sesame seed hot dog buns

small white onion diced fine

12 or more sport peppers

diced or quartered tomatoes

Chicago style relish

Kosher dill pickle spears

Yellow mustard

celery salt


Instructions:

Whittle your carrots or daikon radishes into hot dog shapes using a vegetable peeler. Boil the carrots or daikon until you can just pierce it through with a fork.


Combine the other ingredients to make the marinade. Marinate at least 4 hours or overnight.


Grill or fry your dogs until heated through. Serve steamed sesame seed buns with all the garnishes.
