Drunken Pulled Mushrooms with Snap Peas and Green Beans



 

Paste Ingredients:

1/2 tsp kosher salt

6 cloves garlic minced

1 red chili pepper minced

1 inch piece of ginger minced

2 kaffir lime leaves minced or 1 tsp grated lime rind

1 tblsp chopped lemon grass or 1 tsp grated lemon rind


Ingredients:

1 Tblsp olive oil

12 Ounces of King Mushrooms shredded like pulled pork (I use a fork to shred) 1 1/2 to 2 cups sugar snap peas

1 1/2 to 2 cups green beans

1 cup cherry tomatoes halved

1 tblsp cider vinegar

3 tblsp soy sauce

1 cup fresh basil leaves

2 cups cooked Jasmine rice


Instructions:


Prepare the paste by adding all ingredients to a mortar and pestle and pound to form a paste.


Heat a large saute pan over medium-high heat. Add olive oil and add paste. Stir-fry for 30 seconds. Add mushrooms and cook until softened about 4 minutes. Add snap peas and green beans and stir-fry until crisp tender. Add tomatoes, vinegar, and soy sauce. Cook until the tomatoes soften. Stir in basil.


Serve immediately over jasmine rice.
