Eggless Egg Salad Sandwich



 

Make about 2 huge or 4 normal sandwiches

Ingredients: 10 oz extra firm or super firm organic tofu

1/3 cup minced onion 1/3 cup minced celery (about 2 stalks)

2 tblsps minced fresh dill or 2 tsp dried dill 1 1/2 tsp black salt (kala namak) (found online or in ethnic isle of grocery store) 1 1/2 tsp garlic powder

1 1/2 tsp turmeric 1 tsp coarse kosher salt 1 tsp ground black pepper 2 heaping tsp yellow mustard

3 Tbsp to 1/4 cup vegan mayonnaise


Possible sandwich garnishes:

Garden fresh tomato

lettuce

avocado

pickles

pickled jalapeno

olives

Instructions:

In a large bowl crumble the tofu. Add in all remaining ingredients. Mix well. Add this onto bread of your choosing (I like mine toasted and rye) and garnish however you want.
