Ooey Gooey Vegan Nozzarella

Ingredients:

1/2 cup raw cashews (soak if you don't have a powerful blender)

1 14 oz can full fat coconut milk from a can

2 Tblsp vegan butter

2 cloves garlic

1 1/2 Tblsp tapioca

2 Tblsp nutritional yeast

1/2 tsp onion powder

1 tsp coarse kosher salt

1/4 tsp black pepper

1 tsp vegan lactic acid (optional)


Instructions:

Add all ingredients to a blender and blend until smooth. Place blended contents in a small sauce pan over medium heat and whisk until thick and gooey.
