Ingredients:
6 oz dry pasta of your choice
2 cups of fresh spinach
1/2 cup cooked white beans
1 Hass avocado
2 cloves garlic
1/2 cup fresh basil
1/2 cup fresh parsley
1 tsp kosher salt
2 tbsp nutritional yeast
1/2 cup reserved pasta water
12 cherry tomatoes
chives for garnish
Instructions:
Prepare the pasta according to package instructions. 1 Minute before pasta is done throw in spinach to wilt. Drain reserving 1/2 cup cooking water.
Place cherry tomatoes under a broiler and broil until skins split.
In a blender combine beans, avocado, garlic, basil, parsley, salt, nutritional yeast and reserved pasta water. Blend until smooth.
Combine avocado sauce with hot cooked noodles, garnish with broiled cherry tomatoes and chives.
