Sautéed Zucchini, Mushrooms and Cherry Tomatoes over Quinoa



 

Ingredients:

1/2 cup dry quinoa or rice

1 Tblsp olive oil 1/2 cup diced red onion

5 cups chopped zucchini 4 oz sliced button mushrooms

3 cloves garlic minced 1 tsp coarse kosher salt 1/2 tsp ground black pepper

1 pint cherry tomatoes halved

Fresh basil minced (optional)


Instructions:

Cook quinoa according to packaged instructions and keep warm. Add olive oil and red onion to a saute pan over medium heat. Cook about 4 minutes. Add in all remaining ingredients except cherry tomatoes and increase heat to medium/high. Cook until zucchini is softened but not mushy about 4 minutes. Add in cherry tomatoes and cook until they are wilted. Adjust seasonings if needed and add basil if using. Serve over cooked quinoa or rice.
