Ingredients:
1 cup Tefff Flour
1 cup All Purpose Flour
2 tsp baking powder
2 cups Club Soda
3 Tblsp White Vinegar
1/2 tsp Vegan Lactic Acid (optional)
Salt to Taste
Water if it needs thinning
Instructions:
Combine all ingredients in a mixing bowl. Whisk until you have a thin crepe batter like consistency.
Heat a large non stick skillet over medium heat. For large Injera use 1/2 cup of batter and swirl into the pan. Cook for 1 minute. Cover with a lid and cook for 1 minute more. No need to flip. Carefully remove Injera to a plate. Continue with remaining batter. If bubbles seem to stop forming on top you may want to check and see if your pan is too hot.
Roll up your Injera and Enjoy!!!
