Wild Mushroom Vegan Jerky

Ingredients:

3 Lbs Hen of the Woods or Oyster Mushrooms Cleaned (About 6 to 8 cups)

3/4 Cup Soy Sauce

1 tsp Liquid Smoke

1/4 Cup Maple Syrup

2 Tblsps Olive Oil

1/3 to 1/2 cup Orange Juice

1 tsp Garlic Powder

1/4 tsp Cayenne Pepper if you like spicy jerky


Instructions:

Boil the mushrooms for 10 minutes in salted water before marinating.


Combine the remaining ingredients in a container that has a tight fitting lid. Now use this marinade as a guide, you can always use brown sugar instead of maple syrup or apple juice instead of orange juice. Just make it to your liking.


Place mushrooms in the marinade container and marinate the mushrooms overnight. Make sure the mushrooms all get coated. You may have to flip them around to ensure they all get soaked.


Drain the mushrooms and dehydrate at 115 degrees F. for about 6 hours. I believe you could do these in an oven on the lowest setting checking every 30 minutes until desired consistency.


Store in a dry container.
